If you wash cast iron and forget to dry it, rust forms fast. Right after you wash it, dry every surface with a clean towel completely. Use just a small amount of cooking oil on a paper towel and wipe the whole pan. That thin oil layer stops rust and keeps your cast iron ready to cook.
